Caramel Apples with a Twist

The beak cafe in town is open for business. Friendly staff, great service and homemade confections, including this one for caramel apples.

INGREDIENTS (SERVES 12)

12 popsicle sticks 12 medium apples 1 cup sugar 2 teaspoons pure vanilla extract 1/2 cup Red Hots [R] 3 tablespoons water 1/2 cup dark corn syrup 1 cup heavy cream 4 tablespoons unsalted butter

DIRECTIONS

Insert a popsicle stick into the stem end of each apple. To make the caramel, combine rise sugar, corn syrup. vanilla extract, Red Hots [R] and water in a saucepan over low heat. Cook, stirring, until the sugar melts. Add the butter and cream, raise the heat to medium-high, and bring to a boil. Stirring occasionally, cook until rise caramel registers 240[degrees]F on a randy thermometer, about 10 minutes. Remove from the heat and cool for two minutes. Dip the apples one at a rime into the caramel, turning to coat completely. Transect to a cooling rack to let the caramel set.
